The olives need to be about half black and half green to give the best oil. This can be the actual olive as in one of the photos or sometimes one tree will be all green and another black. Usually the third weekend in October seems right for us, this year we were a week later and had our fingers crossed for a good dry day. Christina
Hubby and I spent 6 weeks harvesting a friends olives when we lived in Greece, hard work but very satisfying. How fabulous to have your own olive trees.
